This is an adaptation of a muffin recipe that was published in our local paper a few months ago. It uses whatever you've got on hand. Really. I've adapted it a number of ways to make it vegan/not vegan, etc. and I love it! I especially heart that it uses up whatever you've got in the fridge right before grocery day.
Wet Stuff first:
1 cup of wet white stuff (ie. cottage cheese, tofu, yogurt, mashed potatoes, milk, etc.)
1/4 cup butter or oil or squashed avacado
1 cup sugar or similar
2 beaten eggs or egg substitutes
1 tsp. vanilla or lemon juice
pinch of salt
1 1/2 cups of wet stuff that you have on hand (ie. canned pineapple, applesauce, grated carrots or zucchini, bananas, etc.)
Then dry stuff:
2 tsp of spice - mix them up!
1 tsp baking soda
2 tsp baking powder
2 cups of flour (cut with oats/bran/Raisin Bran cereal, etc.)
1 cup of dry stuff that you have on hand (nuts, chocolate, cranberries, etc.)
Like all muffin recipes, bake for 20 minutes at 375 degrees Farenheit. See if you can eat just one...

Marvelous! Thanks for sharing....I just happen to have yogurt that needs to be eaten TODAY and a basket of week old blueberries in the fridge...
